I forgot to enter this one that I was super excited about!!
I picked this because I already have a pic of it- but it is a family favorite anyway! :)

Easy Pumpkin Swirl
3/4 cup Bisquik
3 eggs
1 cup sugar
2/3 cup pumpkin
1 cup chopped pecans
2 tsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp nutmeg

Beat eggs and sugar until fluffy. Beat in pumpkin. Stir in dry ingredients. Pour into jelly-roll pan and spread evenly. Sprinkle with pecans. Bake at 375 for 13-15 min.
Invert on towel dusted with powdered sugar, roll up. Place seam side down on wire rack and let cool. Unroll, spread with filling (following) and reroll. Refrigerate until ready to serve.

Filling ingredients:
1 cup powdered sugar
8 oz cream cheese
6 TBL butter
1 tsp vanilla

Beat together until smooth.

Chicken Spaghetti



Serves 8



•Chicken Spagetti 450.jpg8 ounces angel hair pasta


•2 cups chopped, grilled chicken or 1 large can of chicken


•1 can (10 3/4 ounces) cream of mushroom soup (98% fat free or regular)


•1 can (10 3/4 ounces) cream of chicken soup (98% fat free or regular)


•1 can (10 ounces) Rotel diced tomatoes and green chiles, undrained


•1 cup (8 ounces) sour cream


•Sprinkling of Parmesan or Mexican-blend cheese
